This is one of those salads that pack a huge flavour punch and is ridiculously easy to make.
2 round slices of watermelon with green part removed
Hand full mint leaves
Hand full coriander leaves
Hand full basil leaves
Hand full picked watercress
Toasted sesame seeds
2 tsp white vinegar
2 tsp sugar
1 tsp toasted coriander seeds
1 tsp sunflower seed oil
1 tsp freshly grated ginger
Finely sliced green part of 1 spring onion
Pinch of salt and pepper
Cut 2 discs of watermelon and remove the outer green skin. Then cut your watermelon into 1/8 triangles and place them in a serving dish.
To make the dressing that goes on top of the watermelon mix all the dressing ingredients together and stir until the sugar has fully dissolved.
Drizzle this dressing over each piece of watermelon evenly.
Now scatter with freshly picked herbs and sesame seeds over the dressed watermelon.
