Yogurt Soda Bread.

If you ever need bread in a hurry this recipe is for you.


Before we start this brilliant recipe I must warn you, this is not a traditional soda bread.

One day I really wanted some soda bread in the house to go with some amazing smoked salmon. However, I actually had very little of the ingredients to make a classic Irish soda bread so I had to improvise.

Let's just say this has turned out to be a wonderfully tasty mistake that I now make on a regular basis.


So here it is, my mistake yogurt soda bread.


First things first you will want to pre heat oven to 220°c. With a baking tray inside.

The dry ingredients


300g organic plain flour 30g organic Rye flour 50g wheat germ 20g bran 1tsp bi carb soda 1/2 tsp sea salt

Simply mix all of the dry ingredients together in a large bowl.


The wet ingredients

450g organic full fat yogurt Freshly squeezed juice of 1 lemon

Add wet ingredients to dry ingredients. Very gently mix together until combined. You want to make sure you work it as little as possible.


The more you work the dough, the tougher & dryer the final  bake will be.

Pull out the tray from the preheated oven and sprinkle with a little flour to avoid the bread from sticking to the tray.

Form a ball shape with the dough & place it on the tray, score the top of the bread giving it a cross shape & then put it in the oven for 40 minutes at 220°c it should be nice golden brown & when tapped on the bottom should sound hollow.

Let the bread cool down before cutting into it as this will let out all the steam and will leave your bread dry. (or if your like me eat the whole thing hot with a stick of salted butter)
